It’s built on protein-rich chickpeas and creamy avocado, tossed with crisp vegetables in a bright lime-cumin dressing that ties the whole bowl together. What You’ll Need

  • 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
  • 2 ripe avocados, diced
  • 1 large English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
